I have found the ultimate banana bread recipe, it is low fat, extremely moist and best of all Vegan. I decided to play around with some of my recipes and challenge myself to create a Vegan cake that actually tastes good. I first tried it with a Carrot cake and it turned out so well that when I put it to a taste test, none of my tasters (the kids in the house) knew the difference between the vegan version and the non-vegan version. So it only felt right to try it once again with one of my favourite recipes, Banana bread. And it turned out amazing! So enough talking, I will share my banana bread recipe, let me know how it turns out for you.
120g brown sugar
150g wholewheat flour
100g plain flour
3 tsp baking powder
3 tsp Cinnamon
90g Crushed Walnuts (Optional)
2 Tbs Ground Chia Seed mixed with 6 Tbs water
90g Sunflower Oil (Weighed)
4 Medium Bananas
Preheat oven at 200 degrees celcius
Mash up the bananas
Mix the bananas with the oil, sugar, chia seed mixture and vanilla
Add the flour, baking powder and cinnamon, and combine well (add a little soy milk or water if its too dry)
Transfer to a greased loaf tin and bake for 20 minutes before checking
Bake for another 40 minutes (approximately)
Leave to cool down and then slice, and enjoy with a cup of tea. Just and tasty, but with no butter or dairy.
