I love No Bake Energy Balls, they are super easy to make and grab out of the fridge, they travel great and they taste like a treat. What I love the most about them is that you can mix it however you like to suit your taste, but in general, they are made from just a few simple ingredients that you always have on hand. I have been trying a lot of recipes with oats recently because they are high in fibre and keep you fuller for longer and this recipe for healthy oat energy balls is a winner. Recipe: Paleo Banana Bread

Since I went Paleo, the most difficult thing for me has been finding sweet treats. I have such a sweet tooth and banana bread is one of my favorite things to make & eat – Find my Vegan Paleo Bread here. I recently discovered this Paleo Banana Bread recipe by Chef Pete Evans (here) and I immediately tried it out for myself. It is delicious and tasted just like a regular banana bread but it was sugar-free & gluten-free. I added some Pecans because I love pecans and I knew they would go well with banana.

Healthy Chicken Pesto Pasta

My favourite thing to eat at Pizza Express is their Pollo Pesto Pasta, I’m obsessed with it. It has Chicken, mushrooms, red onion, mozzarella, Gran Moravia cheese and pesto sauce, absolutely delicious but it will definitely leave you with a whole lot of regret afterwards. So the other day I decided to try and make a slightly healthier version (by that, I mean using a healthier Pasta and without the cheese) at home and it tasted almost exactly the same. Guilt Free “Fried Rice”

I love rice, I eat some type of rice every Sunday (if you’re Nigerian, you know what I’m talking about) so after reading an article on how white rice is overly processed and should be cut out or limited, I was gutted and I started trying to limit how much rice I ate. However, for the past few weeks I started the Whole 30 process (more on this in another post) and I have cut out rice completely from my diet so it has been a long process trying to find alternatives for rice. But fear not, I have found a really good way to substitute rice in fried rice. So if you are looking to cut down your carbs or give up rice, then this cauliflower fried rice recipe is the one. It is guilt free, paleo/ whole 30 compliant, easy to cook and it is really tasty too.

Best Vegan Banana Bread Recipe

I have found the ultimate banana bread recipe, it is low fat, extremely moist and best of all Vegan. I decided to play around with some of my recipes and challenge myself to create a Vegan cake that actually tastes good. I first tried it with a Carrot cake and it turned out so well that when I put it to a taste test, none of my tasters (the kids in the house) knew the difference between the vegan version and the non-vegan version. So it only felt right to try it once again with one of my favourite recipes, Banana bread. And it turned out amazing!
