I love No Bake Energy Balls, they are super easy to make and grab out of the fridge, they travel great and they taste like a treat. What I love the most about them is that you can mix it however you like to suit your taste, but in general, they are made from just a few simple ingredients that you always have on hand. I have been trying a lot of recipes with oats recently because they are high in fibre and keep you fuller for longer and this recipe for healthy oat energy balls is a winner. Since I went Paleo, the most difficult thing for me has been finding sweet treats. I have such a sweet tooth and banana bread is one of my favorite things to make & eat – Find my Vegan Paleo Bread here. I recently discovered this Paleo Banana Bread recipe by Chef Pete Evans (here) and I immediately tried it out for myself. It is delicious and tasted just like a regular banana bread but it was sugar-free & gluten-free. I added some Pecans because I love pecans and I knew they would go well with banana.

I have found the ultimate banana bread recipe, it is low fat, extremely moist and best of all Vegan. I decided to play around with some of my recipes and challenge myself to create a Vegan cake that actually tastes good. I first tried it with a Carrot cake and it turned out so well that when I put it to a taste test, none of my tasters (the kids in the house) knew the difference between the vegan version and the non-vegan version. So it only felt right to try it once again with one of my favourite recipes, Banana bread. And it turned out amazing!
