Guilt Free “Fried Rice”

I love rice, I eat some type of rice every Sunday (if you’re Nigerian, you know what I’m talking about) so after reading an article on how white rice is overly processed and should be cut out or limited, I was gutted and I started trying to limit how much rice I ate. However, for the past few weeks I started the Whole 30 process (more on this in another post) and I have cut out rice completely from my diet so it has been a long process trying to find alternatives for rice. But fear not, I have found a really good way to substitute rice in fried rice. So if you are looking to cut down your carbs or give up rice, then this cauliflower fried rice recipe is the one. It is guilt free, paleo/ whole 30 compliant, easy to cook and it is really tasty too.

Fried rice 1Cauliflower “Fried Rice”
Servings: 4

1 medium head cauliflower, rinsed

1 tbsp Olive oil/ Coconut oil

Pinch of salt

1/2 small onion, diced

2 cups Mixed Vegetables

2 garlic cloves, minced

Handful of King Prawns (skip if Vegetarian/ Vegan)

1 cup Chicken/ Vegetable Stock

Spices (Thyme, curry powder, rosemary)


  1. Grate the cauliflower until the cauliflower is small and has the texture of rice and set aside.
  2. Heat a large pan or wok over medium heat and add oil. Add the onions & garlic and sauté and then add the vegetables and cook for about 2 minutes.
  3. Add the prawns and the seasoning, cook until the prawns are completely cooked
  4. Add the Cauliflower and mix thoroughly, then add the chicken stock and cook for a further 5-6 minutes until cauliflower is cooked.
