Recipe: Paleo Banana Bread

Since I went Paleo, the most difficult thing for me has been finding sweet treats. I have such a sweet tooth and banana bread is one of my favorite things to make & eat – Find my Vegan Paleo Bread here. I recently discovered this Paleo Banana Bread recipe by Chef Pete Evans (here) and I immediately tried it out for myself. It is delicious and tasted just like a regular banana bread but it was sugar-free & gluten-free. I added some Pecans because I love pecans and I knew they would go well with banana.

Paleo banana bread

Ingredients:

100g coconut flour
100g almond flour
6 very ripe bananas, mashed well with a fork 
250mls coconut oil, melted
1 teaspoon ground cinnamon
2 teaspoon baking soda
70g walnuts, roughly chopped

70g pecans, plus extra for garnish
170g (6 oz/½ cup) raw organic honey, plus extra 
8 free- range eggs
1tsp vanilla 
pinch of salt

My only note is that it has more of a stodgy consistency than a bread like texture. However, it was so moist and very delicious.
